Sakura City, Chiba Prefecture, in cooperation with a local high school, has launched an initiative to develop recipes using rice flour instead of wheat.
This initiative was started in cooperation with Sakura Higashi High School, the only public high school in the prefecture to offer a cooking license to promote rice flour as a substitute for wheat in Sakura City, where rice production is thriving.
The recipe to be developed is based on the theme of udon noodles, which are said to be difficult to make with rice flour.
The city's efforts are related to the soaring price of wheat due to the situation in Ukraine and other factors, as well as the drastic decline in the price of rice due to the Corona disaster.
